Best Whole Wheat Bread
(makes 3 loaves)
This reciepe is very adaptable and lends well to creative additions. Try it as rolls, hamburger
buns, breadsticks, cinnamon roll base, calzone crust etc.
10 cups of freshly whole wheat flour (I use a generous 4 cps white wheat and 2 cps Kamut grains)
other ingredients
2 cps warm water
2cps cold milk, juice, soy or rice milk
2/3 cup olive oil
2/3 cup honey
1 egg
add
2 Tbls yeast
optinal: 2 Tbls soy lecithin
mix first 7 ingredients on low speed with 4 cups flour.
This makes your sponge. let the sponge ferment for about 1/2 hour.
After which time, mix on low again to get the air out and add:
4 cups of flour (more or less, if it looks sticky add more)
2 tsp salt
optional: nuts, raisins, seeds, spices, herbs, etc.
Mix on medium speed until it "looks right". After mixing in the flour until the dough is smooth,
not sticky or hard and pulling from the sides of the bowl you can either let it rise one more in the bowl for an hour or take
it out and shape it into loaves, rolls etc. immediatley.
Bake at 400 degrees for about 20 minutes for loaves, or until golden brown. Other shapes should
be about the same time, you just have to judge by whether it looks the right color.

Cinnamon scones So good! I've made these with heath pieces also for a really scrumptious change.
Serves:8-12. Cooking time:15 mins. Pre-heat oven to:425 degrees.
2 cups flour 1/3 cup
sugar 1 tablespoon baking powder 1 teaspoon cinnamon 6 tablespoons cold butter, cut up 1/2 cup cream or half
& half 1 egg 1 bag Hershey's cinnamon chips
Sift together 1st four ingredients. Cut in butter with a pastry
blender or two knives, blending until mixture resembles course crumbs. Stir in chips. Mix together half & half and
egg, and stir into dry ingredients, pressing dough against the sides of bowl until all ingredients are mixed through.
Place
dough on floured surface and form into a 8 inch circle. Cut into 8 or 12 wedges and place on baking sheet about 1 inch apart.
We use a silipat mat. Bake 12-15 minutes until golden brown.
Drizzle with icing: 1 cup powdered sugar 1 teas.
cinnamon enough milk to make it drizzly (add a little at a time)

Banana bread
I like this receipe best with 2 whole extra ripe bananas for moisture. Great with cinnamon butter!
1 ¼ C. White flour
½ C. Whole wheat flour
2 ¼ Tsp. Baking powder
½ Tsp. Salt
2/3 C. Sugar
1 Egg
3 Tbsp. Oil
2 Tbsp. Milk
1 Tsp. Vanilla extract
1- 2 mashed bananas
Pre- heat oven to 350. Blend all dry ingredients in a large bowl. Add wet ingredients including banana. Mix
and pour into one 8”x 4” loaf pan and bake for 25- 30 minutes.
